With plenty of leftover mint from our previous mojitos, we had no choice but to use them for our other cocktail recipes. =) We decided to use our Leblon Cachaca (a Brazilian spirit) and make a pineapple mint caipirinha.
I muddled together two shots of cachaca, half of a slice of pineapple, 3-4 mint leaves, and 1 shot of simple syrup. I poured over ice and topped with club soda. Garnished it with pineapple and a mint sprig, and sipped it away! Minty, tropical, sweet, and tasty- a perfect cocktail on a Sunday afternoon.
