Watermelon mojitos

Occasionally, our family will take a short trip to a resort in Palm Springs.  Oftentimes, we’d get a few cocktails at the pool bar.  But this past weekend, we decided to make our own!  Everyone agreed that a mojito would suffice in this 100 heat weather.  We drove a few miles to the local Ralphs, and grabbed some light rum, limes, fresh mint, simple syrup, and club soda.

The great thing about mojitos is that you can muddle in different fruits and add some flare to your basic mojito recipe (which is tasty enough.)  We had a variety of fresh fruits in our fridge, including watermelon, blueberries, raspberries, and blackberries.  This morning (yes at 10am) we made the basic mojito and a watermelon mojito.

I threw a couple of watermelon chunks in a tall glass, squeezed 3 or 4 lime wedges, threw in about 8 – 10 mint leaves, about an ounce of simple syrup, and “muddled” everything using the rubber end of a plastic spatula.  I poured in about an ounce of rum, topped it with club soda, and then filled it with ice.  And just like that, we had our very own breakfast watermelon mojito.  =)
